Boil ingredients like tamarind, tomato puree and toor dal, to make a curry-like gravy. Add any vegetable of your choice and let it boil for 10-15 minutes. Add the Sambar powder according to your taste and preference, to this mixture. Let it boil for another 15 minutes. Simmer and temper it with mustard seeds, curry leaves and a pinch of asafoetida. You can enjoy this authentic sambar with idli, dosa, steamed rice as well as chapattis. Add 2 tablespoons for a serving of four.
